Luau Dining ChoicesThere are many delicious luau dining choices. Traditional foods include poi, opihi, poke, lomi salmon, kalua pig, and haupia. You can choose from either poi or poke, which is a raw fish salad served as an appetizer. The main course of luau dining is roasted pork, also called kalua pig, with a side dish of lomilomi salmon, a form of raw fish served with fresh tomato and hot red chili peppers. The pork is cooked in an imu, or underground oven, which helps seal the flavor. The dessert of the luau is haupia, which is made from coconut milk in the form of pudding or gelatin. |
